This is a 1 pound raw pork loin fillet and baby red potatoes on top. I also added one quince peeled and quartered but I would skip that because the quince was bland. And I put some whole cloves of garlic in. This was fully cooked in 1 and 3/4 hours but the video was done at 2 hours. Maybe it was fully cooked sooner! But at 1 and 3/4 hours I stuck a thermometer in the meat and it was 180 and was browning on the bottom.
This would make a great hot picnic for two. Or, for on the job or for a trucker with a fridge, this makes 2 meals. Next time I will try a larger piece of pork to make more leftovers. One thing I learned on this was that those baby red potatoes were good for snacking cold out of the fridge! Try it!
